Bar workers train to avoid over-serving

GRAND RAPIDS, Mich. (WOOD) – Police say alcohol played a role in the three deaths that occurred at The B.O.B. in downtown Grand Rapids over the past four years.

… Knowing when to stop is taught in textbooks, too. Dan Gendler runs the Secchia Institute for Culinary Education at Grand Rapids Community College. Gendler points out the curriculum has guidelines and graphs, but warns it’s not an exact science.

“The best way to manage alcohol is just to talk to people,” he said.

He recommends workers talk to customers and ask them questions about where they’ve been, how long they’ve been drinking and if they have recently eaten.
